What to Do with Those Pumpkin Seeds

I agree with my colleagues at eatright.org.  There are many ways to enjoy pumpkins. This winter squash, a staple of fall and Halloween decorating, is rich in vitamin A and potassium. Even the seeds are yummy and healthy.  They contain zinc, an important mineral for health.
 
Here’s a quick recipe for pumpkin seeds I share with my patients:
  • Remove pulp and strings from seeds.
  • Place seeds on a baking sheet that has been coated with cooking spray.
  • Bake a 325 degrees Farenheit for about 30 minutes.
